Welches of Edinburgh smoked salmon fillet, Katy Rogers of Knockraich dairy farm crème fraiche scented with horseradish, black caviar, dill spaghetti cucumber salad

Creamed duck liver mousse, Rannoch smoked duck breast and pomegranate salad, house cumquat jam,
black rye crumb

Baked goats’ cheese and caramelised red onion cheese cake, red pepper sauce, rocket pesto (v)


Turkey ballotine filled with Ayrshire pork sausage cranberry and thyme stuffing, butter fondant potato, confit of brussel sprouts, heather honey roast chestnuts

Grilled red snapper fillet, black ink risotto, steamed tender stem broccoli, Shetland mussel, surf clam and saffron broth

Grilled aubergine and wild mushroom galette baba ghanoush puree, wilted rocket (v)
